Citrus Upside Down Cake

 

When you’re wallowing in citrus, this cake answers the call.

I particularly like it because the cake is healthier than most upside down  cakes.  My version cut the sugar in half and it wasn’t missed.

Citrus Almond Upside Down Cake

Ingredients
  

  • 3/4 c. sugar divided
  • 1/4 c. water
  • 2 oranges peeled and sliced 1/2 "
  • 1 grapefruit peeled and sliced 1/2"
  • 1 c. all purpose flour or whole wheat pastry
  • 1 c. almond meal
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 3 eggs
  • 1 c. plain yogurt
  • 3 T citrus zest
  • 1/4 c. vegetable oil

Instructions
 

  • Preheat oven to 350.   Brush entire plan with oil.   Line 9 " pan with parchment paper.  Brush paper with oil.
    Boil water and 1/4 c. sugar in small pan, swirling occasionally, til it thickens.  Pour syrup over bottom of pan.
    Lay citrus slices, or segments in pattern over syrup in bottom of pan.
    Combine dry ingredients, add eggs and blend.  Add yogurt, zest and oil and mix til smooth.
    Pour batter over citrus and spread evenly.
    Bake 40-50 minutes til tester comes out clean.
    Let cool completely, then invert onto serving plate.
    [this amount of batter overflowed 9" cake pan.  EIther reduce batter by a third, or bake in a springform pan.]
