Ingredients
- 1 c. medjool dates, pitted about 10
- 1 c. raw, unsalted almonds
- 1 c. raw, unsalted cashews
- 1 T. cinnamon
- ½ t. ground ginger
- ⅛ t. ground cardamom
- 1 pinch salt
- 1 c. dried apricots or dried apples roughly chopped
- 2 T. chia seeds optional
Instructions
- Pit dates, cover with warm water and soak for about 5 minutes.Line 8×8 pan with parchment paper.Chop nuts in food processor, til chopped into small pieces, about 15-20 seconds.Add dates, spices, salt and vanilla and process until it becomes a thick paste. If it becomes too thick, add 1-2 t.. water.Add dried fruit and chia seeds and pulse for 20 seconds more.Spread in prepared pan, pressing with spatula. Refrigerate for 6-8 hours, until firm.Cut into 12 bars.
