Ingredients
- 2 oz. butter melted
- 5 T. caster sugar or less
- ½ c. flour
- ½ t. baking powder
- 1 small lemon zest and juice
- 1 T. milk
Instructions
- Grease small pudding basin.Mix flour and baking powder.Combine butter, sugar egg, flour mix in food processor and combine. Add lemon juice and zest and enough milk to make a batter of dropping consistency.Spoon into pudding basis, and microwave on high for 3-4 minutes.Let stand 2-3 minutes before inverting on serving dish.Serve with syrup or jam and custard.
