Fluffy Microwave Pudding

Ingredients
  

  • 2 oz. butter melted
  • 5 T. caster sugar or less
  • ½ c. flour
  • ½ t. baking powder
  • 1 small lemon zest and juice
  • 1 T. milk

Instructions
 

  • Grease small pudding basin.
    Mix flour and baking powder.
    Combine butter, sugar egg, flour mix in food processor and combine. Add lemon juice and zest and enough milk to make a batter of dropping consistency.
    Spoon into pudding basis, and microwave on high for 3-4 minutes.
    Let stand 2-3 minutes before inverting on serving dish.
    Serve with syrup or jam and custard.
