Buttermilk Panna Cotta

Cool base for fruit or fruit sauce.

Buttermilk Panna Cotta

Ingredients
  

  • 1 T. water
  • 1/2 envelop unflavored gelatin
  • 1/2 c. cream
  • 1/2 t. lemon or lime zest
  • 3 T. sugar
  • 1 c. buttermilk
  • 1 t. vanilla extract

Instructions
 

  • Soften gelatin in water in small dish.
    Spray 4 small custard cups with nonstick spray. 
    Heat cream, zest, and sugar in medium sauce pan over medium-high heat, stirring occasionally til sugar dissolved.  Increase heat and bring to low boil. Add gelatin.
    Cook to lukewarm, stirring often. Add buttermilk and vanilla. Divide among custard cups.  Chill, about 4 hours.
