No Bake Date & Nut Bars

Ingredients
  

  • 1 c. medjool dates, pitted about 10
  • 1 c. raw, unsalted almonds
  • 1 c. raw, unsalted cashews
  • 1 T. cinnamon
  • ½ t. ground ginger
  • t. ground cardamom
  • 1 pinch salt
  • 1 c. dried apricots or dried apples roughly chopped
  • 2 T. chia seeds optional

Instructions
 

  • Pit dates, cover with warm water and soak for about 5 minutes.
    Line 8×8 pan with parchment paper.
    Chop nuts in food processor, til chopped into small pieces, about 15-20 seconds.
    Add dates, spices, salt and vanilla and process until it becomes a thick paste. If it becomes too thick, add 1-2 t.. water.
    Add dried fruit and chia seeds and pulse for 20 seconds more.
    Spread in prepared pan, pressing with spatula. Refrigerate for 6-8 hours, until firm.
    Cut into 12 bars.
