When I set out to buy a plum tree to add to our yard, nature threw me a curve.
The variety I had to have required a pollinator. So I returned home with two plum trees (to meet a husband who didn’t want a plum tree in the first place.)
Mercifully, they fruit at slightly different times. But two trees worth of plums is a tall order for a family.
So the search is on for ways to preserve plums and enjoy them beyond that frantic six weeks when the trees explode.
I paired a package of frozen plum puree with a super simple recipe I adapted long ago for plums.
Plum Flummery
Ingredients
- 2 cups plum puree unsweetened
- 1 1/2 cup pineapple juice
- 1/2 cup sugar
- 1/3 cup quick cooking tapioca
- 1/2 teaspoon grated lemon rind
- 1/2 teaspoon vanilla extract
Instructions
- Mix puree, juice, sugar and tapioca in a saucepan and let stand for 5 minutes.Bring to a roiling boil over medium heat. Remove from heat, add lemon rind and vanilla.Pour into the serving dish of choice and chill.
