Plum Flummery
- 2 cups plum puree unsweetened
- 1 1/2 cup pineapple juice
- 1/2 cup sugar
- 1/3 cup quick cooking tapioca
- 1/2 teaspoon grated lemon rind
- 1/2 teaspoon vanilla extract
Mix puree, juice, sugar and tapioca in a saucepan and let stand for 5 minutes.Bring to a roiling boil over medium heat. Remove from heat, add lemon rind and vanilla.Pour into the serving dish of choice and chill.
