When you start separating egg whites from egg yolks, you set up a food waste problem.
Since I loathe meringue and find angelfood cake insipid, I need to work a bit harder to use up every stray egg white.
Kiwi Sherbet
Servings 2 people
Ingredients
- 3 ripe kiwi
- 2 T simple syrup
- 1 lime, juiced and zested
- 1 egg white
Instructions
- Peel kiwi and add to blender jar. Add syrup, lime juice, and zest. Blend thoroughly.Add to ice cream freezer. Whip egg white and add to ice cream maker when sherbet is half frozen.
